Gluten Free Baobab Pumpkin Spice Muffins
A great winter-time gluten free muffin recipe. No matter if you have them with a cup of coffee in the morning, or as an after school snack, these baobab pumpkin spice muffins will sure to please.

Ingredients:
- 3 1/2 cups old fashioned oats
- 2 cups canned pureed pumpkin or fresh pumpkin puree
- 1 cup applesauce
- 1 cup fat free vanilla greek yogurt
- 1/4 cup vanilla protein powder
- 1/4 cup Baobest Baobab Superfruit Powder
- 1/4 cup Baobest Blood Orange BaoBites Superfruit Snacks
- 1 cup baking Stevia/Truvia
- 3 tsp cinnamon
- 3/4 tsp salt
- 4 tsp baking powder
- 1 tsp baking soda
- 1 tsp pumpkin pie spice
Instructions:
- Preheat oven to 350 degrees F
- Put all ingredients in a large bowl and mix
- Scoop batter into prepared mini-muffin tins and bake for 15 – 20 minutes
- Let cool completely in muffin tins then refrigerate
