Tasty vegan blueberry and baobab muffin recipeIngredients:

  • 2 cups flour
  • 1 large ripe banana
  • 3/4 cup almond milk
  • 1 tsp vanilla
  • 3/4 cup brown sugar
  • 1/2 cup olive oil
  • 2 tbsp Baobest Baobab Powder
  • 1/2 tsp nutmeg
  • 1 tbsp baking powder
  • 1 cup frozen blueberries

Instructions:

  1. Preheat the over to 350 degrees F
  2. Blend the banana, almond milk, vanilla and brown sugar in a blender on high. Then add the olive oil
  3. Stir together flour, Baobest Baobab Powder, nutmeg and baking powder
  4. Add the wet mixture to the dry and stir to combine
  5. Fold in the blueberries
  6. Divide evenly among a greased muffin tin
  7. Bake for 22-24 minutes at 350 degrees
  8. Cool before moving from muffin pan
